On the occasion of Diwali, here is recipe of one of the standard Diwali savory snacks.

Ingredients
75 grams all purpose flour (Maida)
75 grams semolina flour (Rava)
90 grams Ghee or unsalted butter
120 grams sugar
1 pinch baking soda
1/4 teaspoon cardamom powder
1/4 teaspoon saffron powder
For Garnish
12-15 Powdered or Half cloves of almonds or cashews
Preparation time: 40 minutes
Serves: Makes about 12-15 pieces
Directions
1. Sieve the all purpose flour, semolina flour and baking soda.
2. In a separate bowl beat the butter and sugar together until light fluffy.
3. Add cardamom powder and saffron powder to the butter and mix well.
4. Then add the flour gradually and mix well.
5. Allow mixture to stand for 30 minutes.
6. Take a scant tablespoon of the mixture and roll into a ball. Then flatten slightly and put on a greased baking tray. Repeat process with remaining mixture.
7. With your index finger make a little depression in the centre of each cookie and place an almond/cashew for garnish in it.
8. Preheat the oven at 350º for 10 minutes and keep it for baking for 25-30 minutes until golden yellow.
9. Keep it to cool and store.
Note: These cookies can be molded in any desired shapes. You can add powdered Pista, Badam, Coconut is dough. Baking time may vary slightly based on cookie size & oven.

I just baked Nankatai today and it turned out very soft and crispy. Here are the cup measurements that i used
2 cups all purpose flour,
3/4 cup fine rawa,
3/4 cup ghee or butter,
1 cup sugar,
1 tsp baking powder,
1 tsp cardmom powder.
Preparation method is same as what Dimple has put in expect for point 5, I perpared it right away after preparing the dough.
Txs Swati for cup measurement, I didn’t have them. Even I dont follow step 5 that strickly
