Zucchini Bread Recipe

I got this very simple and easy to follow recipe from one of my colleagues. Enjoy!!!

2 cups sugar
1 cup oil
3 tsp vanilla
2 cups grated raw zucchini (about 2 med-lg)
3 cups flour
1 ¼ tsp baking powder
3 tsp cinnamon
1 tsp salt
1 tsp baking soda
1 cup nuts

Mix together first 3 ingredients, add zucchini, and then add all dry ingredients.

Pour into 2 well greased loaf pans and bake 1 hour at 325°

  1. I made only one loaf by cutting everything in half. It came out really good. It also can be frozen wrapped in plastic and warming up in oven when needed.

  3. Why typically bread has 1hr bakeing time v/s cakes 20-30min? Banana Bread and some other which we have tried before also has 1hr. bake time hence curious…

  5. I am guessing because bread batter is much more dense than cake which is beaten to incorporate air and make it lighter.

  6. Ameeta did you use White ?Flour or Wheat flour

  7. I use white flour but I think wheat flour should be ok too.
    I also use the same recipe for banana walnut bread by replacing two riped bananas for zucchini and cutting down sugar a little bit.
