Banana Cake:
Great way to use up over ripened bananas : either to put smashed bananas in pan cake batter or make banana bread/cake/muffin etc. I recently came across this recipe and changed few measurements here and there , the cake came out really good.
2 cup flour
2 big bananas smashed
1 tsp baking soda
1 tsp baking powder
1/2 cup oil
2/3 cup sour cream
3 tsp egg replacer dissolved in warm water
1 cup brown sugar or white sugar
1 tsp vanilla
1/2 cup walnuts
Mix all the dry ingredients. Mix all the wet ingreadients.
Mix the above two.
Bake it for 35-40 min at 350 F.
Pour some chocolate sauce over the piece of cake and top it with whipped cream (ready made – the one you find in frozen section). Tastes better that way.
