Heard there was a discussion recently about how to succesfully make home made Dahi.
Can you please share your expert tips here so that will be useful for all i.e. the oldtimers as well as newcomers !
Also does anyone make flavored yogurt at home ?

I use the culture from someone who is making yogurt at home. Somehow using store bought yogurt (as culture) has not been working for me. During winter I switch on the oven light to keep it at warm temperature. I also use casserole & keep it in oven or any warm place.
i do it regularly to start get any store made yogurt with living cultures and use it . Also if u have oven light turn on else preheat oven at low temp mine lowest is 170 -175 approx and leave it overnight .
If it is not done i add more culture and again warm the oven but it is done the other thing is i use stales steel vessel for yogurt and also i make sure i get the organic culture from the store . once i have the dahi i use my own culture.
I like the Trader Joes plain low fat yogurt to use for culture. I always use the milk cooker ( 1 ltr ones) to warm the milk. The advantage of milk cooker is that there is an insulation of warm water which helps to form the yogurt in any season.After adding the culture to lukewarm milk I cover the milk cooker with kitchen towel and keep it in the oven. On really cold winter days I turn the oven light on. This has always worked for me for more than a decade.
I had got the culture from a south Indian friend .. Warm the milk add the culture and warm milk and then mix it properly..
I have also put the culture in small ice tray and made into cubes saved in the ziplock bag in the freezer when I feel my dahi is not setting properly I take one of the cube to set Dahi..In winter I get readymade yogurt.
I know friends who get the culture from gurdwara and some of them buy plain dahi from proper punjabi restaurant and use that culture for setting dahi
Poonam, for how long does the frozen culture last.
Deepa atleast 6months… Recently I tried myself had got plain yougurt from Jewel of India n tried to set dahi it set nicely but the taste was sour we didnt like it
