Simple one for homemade refried bean…
3 cups Rajma,
Oil
Taco Seasoning
Corn
1 Onion thinly sliced
1 Tomato finely chopped
1 cup Tomato Ketchup
2-3 Tbsp Green Chilli Sauce (Depends on your spice level)
Salt
1) Soak Rajma overnite
2) Add some salt and Pressure Cook it.
3) Remove excess Water and smash Rajma completely. Dont make it too dry.
4) Heat oil.
5) Add Onions and Corn. Saute till Onions are light brown and corn is crunchy.
6) Add Tomatoes and Taco Seasoning.
7) Add Rajma, Ketchup and Chilli Sauce.
8) Let it cook for about 10-15 mins.
Use it for your Tacos or Enchiladas
Mexican Rice
1) 1 cup basmati rice
2) 1 Tomato
3) 2-3 Dried Whole Red Kashmiri Chillies
4) 1 Onion Sliced
5) 3-4 Garlic Cloves. Finely chopped/Crushed
6) 1/4 cup Tomato Ketchup
7) Some Finely Chopped Cilantro for Garnish.
8) Salt as per taste
9) Oil
1) Cook Rice. Dont Overcook it. Drain all the water and let it cool..
2)Boil Tomato and Chillies. When cool Puree them together
3) Heat Oil in a wok
4) Add Onion and Garlic. Saute till Onions are brown
5) Add tomato Puree, Salt and Ketchup and let the mixture cook for sometime. Abt 10-15 mins.
6) Lower the heat and add cooked Rice. Mix eeverything well and remove from the flame
7) Garnish with Cilantro.
Serve with Enchiladas or Burrito
