What is Quinoa – A whole grain with the most protein for vegetarians. I am looking for more recipes with this whole grain, so please share if you use this regularly 🙂
I recently tried this recipe from the web and liked it. Sharing it here for others to try.ÂÂ
Ingredients:
Quinoa – 1/2 cup, washed and drained
Onion – 1 small, chopped
Mixed Vegetables – 2 cups
Green Chilies – to taste, slit
Broth/Stock – 4 cups
Salt – to taste
Black Pepper – to taste
Cilantro (Coriander) – for garnishing, finely chopped
Lime Juice – to taste for garnishing
Method:
1. Place washed Quinoa, Onions, Mixed Vegetables, Green Chilies, Broth and Salt in a pressure cooker.
2. Cover and pressure cook for 1 whistle and switch off stove.
3. Once pressure is gone from the cooker, open lid and add Cilantro, Black Pepper and Lime Juice to taste.
4. Serve hot.

Tabasco & Asparagus Quinoa Recipe
Thanks Bhavini….Have this big Quinoa pack sitting in my pantry but dont know what to make out of it. Shall try the soup
I make quinoa salad with mexican flavors often. Don’t have precise recipe as I came up with this version based on few recipes found online.
1) Soak quinoa in cold water for about half hour. Rinse under running water for 5-6 times. Then cook it in broth/stock/water for about 15-20 min. Ratio is one part quinoa to 1-1/4 part liquid. When liqid is absorbed fluff it with fork and set aside.
2) Saute some onion, garlic in olive oil. Add oregano, cumin powder, red pepper flakes, salt.
3) Add vegetabales of your choice. I use zucchini, bell pepper, mushroom, celery etc. Once they are almost cooked, I add corn kernels and black/pinto beans.
4) Add finely chopped pickeled jalapeno, olive and little bit of taco sauce (all optional).
5) Remove from heat. Add cooked quinoa, chopped tomatoes, cilanto and little lime juice. Enjoy it hot or cold!!!
If quinoa is not washed thoroughly, it tastes very bitter so soaking and rining is very important in quinoa recipe.
I was standing in the queue in Yahoo! Cafe when I saw one of today’s special was a dish based on Quinoa. The name sounded familiar but it did not strike me till very last minute that this was the item on which the recent KV article was written. Hence I changed my order at last minute and went in for
“Citrus Spiced Quinoa with Savory Tofu, “Serrano Farms” Organic Zucchini, Tomatoes, Rainbow Chard, Dill and Extra Virgin Olive Oil”
Not bad at all.
I made the soup yesterday by changing the recipe little bit. First, sauted oninon in olive oil, added some italian seasoning, red pepper flakes and about qtr cup of basic pasta sauce. Then added stock, salt, pepper as per Bhavini’s recipe. Finally, added lemon juice and fresh basil when serving. It came out pretty good:-)
As I was making, Kairavi glanced at the post and said Bhavini mashi gave you in April 2010, you are making it now!!
Came out yummy..initially it appeared like clear soup which I thought may not work for our family hence to bring some color added 1/2cup Salsa (since I had Salsa bottle open) based on use of Pasta sauce by Ameeta.
FYI – Lot of folks seem to be adding quinoa along with rice – 1 cup rice, 1/4 cup quinoa is the proportion i got from friends and colleagues both.
Cooked Quinoa just by itself mixed with some stir fry veggies, garlic, lemon and black pepper taste very yummy.
