I make Tomato Rice. I cook the rice in Tomato Puree instead of water and add different vegetables. I also sometimes add mong to the rice to make it healthy.

Phudina rice – Grind more phudina (you probably need 1 whole bunch for taste), less coriander leaves, ginger and grren chilli into a paste. Make paste of cashews with some water. and put these 2 mixtures in the pulav while giving tadka along with other veges. And mix it with cooked rice.
Pav bhaji masala instead of biriyani masala also tastes good in the pulav.
Pav bhaji masala in pulav??? Now this I got to try at home. :-).
Green Pulav – Spinach + Phudina + green peas. For 1 cup of rice, i use 1 bunch of spinach & 1/2 bunch of mint. Cook spinach, make puree of it with mint, green chillies, ginger. Cook rice with this puree and peas together.
Cabbage Rice – Saute sliced Onion, bell Pepper + lots of cabbage. Cook rice seperately and mix together with black pepper. Make tomato soup to go along with this rice.
Make the tomato gravy like we make for pav bhaji add pav bhaji masala to it and add cooked rice. This variation also tastes good.
I make various south Indian style rice like Lemon, Tamrind, Tomato, Curd & Bisibele Bhath. Instead making plain rice and then mixing flavoring & vegg., I usaully put rice, masala, vegg. everything togther in rice cooker.
One of rice dish I make is Baked Coconut Rice With Curry. In this one cook rice in coconut milk, make mix vegg. curry, layer rice & vegg and bake it. I will post details later
LEMON RICE-1 cup cooked rice +1 1/2 lime juice + 1 tbsp oil,mix them add vagar to it,(for vagar-peanuts,urad dal,channa dal,rai-jeera,gr.chili,curry leaves,haldi)ang its ready .
BROWN RICE-to cooked and garam masala(abt. 1 thsp for 1 cup rice),red chili pwdr,for vagar -ghee + cashew + jeera ,sprinkle some corr.leaves.
celery & corn pulao. spices include garam masala, jeera powder, turmeric, salt. Make just like pulao.
spinach rice. cook rice first. add jeera, ginger, green chillies, garlic paste, onion, potatoes to oil. add palak paste and then rice. mix.
Baked Coconut Rice With Curry –
For the rice –
2 teacups uncooked rice
1 large coconut
2 sticks cinnamon
2 cloves
2 tablespoons ghee
salt to taste
For the paste –
1/2 grated coconut
1 tablespoon coriander seeds
1 1/2 teaspoons cumin seeds
3 sticks cinnamon
3 cloves
3 peppercorns
10 to 12 Kashmiri chillies
1 tablespoon khus-khus
1 teaspoon oil
For the curry –
3 teacups mixed boiled vegetables
2 large tomatoes
1 tablespoon fresh cream
1/2 teaspoon sugar
3 tablespoons ghee
salt to taste
For decoration – fried cashewnuts
For the rice : Grate the coconut, add 3 1/2 teacups of water & allow to stand for a while. Blend in a liquidiser & strain. Heat the ghee, add the cinnamons & cloves & fry for a little while. Add the rice, coconut milk & salt. Cover & cook until the rice is tender.
For the paste : Heat the oil & fry the remaining ingredients for 1 1/2 minutes. Grind into a paste with the help of water.
For the curry : Put the tomatoes in hot water for 10 minutes. Grate into a pulp. Heat the ghee & fry the paste for 1 minute. Add the vegetables (french beans, cauliflower, green peas), grated tomatoes & 1/2 teacup of water & boil for 3 to 4 minutes. Add the cream, sugar & salt.
How to serve : In a large baking tray, spread the curry & cover with the rice. Top with the fried cahsewnuts & cover the tray with aluminium foil. Bake in a hot oven at 225 degree C (450 degree F) for 25 minutes. Serve hot. Serves 6 to 8.
Additional Notes – I use 1 can of ready coconut milk and add water if needed to cook the rice. I make little extra curry then given portion. You can add mix vegg. of ur choice. Also dont cook vegg. tender on Gas, as they will get cook while baking anyways. For decoration just put normal cashew (not fried), they get baked and brown 🙂
Like dal-dhokali this is good alternative for hot, yummy food in these rainy days instead of Bhajiya 😉
