Hi KVites,

the picnic was absolutely fun! Though I wish I would have tasted all the food and known the idea/ inspiration behind it. Please share.

I made the dabeli pizza . I had tried this a few weeks ago when I hand leftover dabeli puran and pizza dough from TJ. Used raw banana instead of potato for the Jain pizza. Topping of Dabeli puran+ cheese + roasted -salted peanuts+ onions on hand rolled pizza.

Some other ideas I was toying with included quinoa pattie sev puri, mango- Matha(spicy chass) and samosa falafel. The tried and tested idea was the easy way out!

  1. Thanks Jaina for creating the post, Yay !! Lots of creativity with food items. Awesome combinations. The dish I made was called khamaneli 🙂 Initially had thought about making it stuffed but lack of time did it as dabeli flavor in the regular khaman. For kids made the regular non spicy khaman. The other idea I was toying with was apple kheer topped with chocolate chips :-).

  2. As always, it was an awesome feast with lots of innovative dishes!
My dish was mediterranean sushi rolls. I used lavash, mix of regular and mediterranean hummus ( seasoned with wasabi paste and finley chopped pickled ginger to get sushi flavours), home made sushi rice, spinach, carrots and avacado drizzeled with some rice vinegar.

  3. Good thread Jaina and definitely lot of creative food! My dish was just regular Khatta Doklas. However, I added flavors – Spinach+Mint for Green, Turmeric + asafoetida for Yellow & regular White ones.

I agree – awesome feast! Mine was Chinese Bhel. Had to boil+fry noodles, cabbage, carrots, spring-onions, celery. For Schezuan Sauce, I followed:

  5. Hi All, Loved all the different colorful varieties of food ! Wish could hve tried all. My dish was Choclate Rasmalai.
Make rasmalai without saffron and keep in fridge.
    For Choclate –
Melt choclate (1 bag of mini choclate chips) using double boiler and keep aside.
Make whipped cream – 1 can of heavy whipped cream (I think it was 250 ml) + 1 cup sugar, beat it for 5 mins on high till good airy whipped cream formed and keep aside.
Make geltaine mix – heat 2 Tbsp powdered gelatine ( veg gelatine I got from India) with 4 Tbsp water. Heat this mixture for a minute or two till the gelatine melts . If mixture becomes too thick add more water.

Now Mix the whipped cream with the chocolate. gradually fold, so that air does not come out, do little at a time. Add the gelatine mixture to it.

Take a rectange mold, dust it with iciing sugar+oil. Add a layer of the choclate mix, then add rasmalai (remove water content from rasmalai) creating a layer of it, then add a layer of cholate again.
    Deep Freeze for 4 hrs.
