Substitutes for Eggs in baking

Many of us who like to cook – especially bake cakes and cookies at home – have faced a problem of how to replace eggs in the recipe since many of us do not eat eggs. Here is the list of items I found on the web that can be substituted for eggs in the recipes that uses them as binders or leavening agents.

I, myself, have not used any of these yet as I am using a product called “Egg Replacer” from a company called Ener G. One of the ingredient in this is potato starch so it may not be useful for those who don’t consume roots. It is available at Whole Foods.

For each egg, substitute one of the following.

As Binders

1/2 large mashed banana

1/4 cup apple sauce or pureed prunes

1 tablespoon ground flaxseed mixed with 3 tablespoons water

1 1/2 tablespoons water, 1 1/2 tablespoons oil, and 1 teaspoon baking powder

1 tablespoon apricot puree

1/4 cup of soft tofu

1/4 cup soy milk

As Leavening

2 tablespoons carbonated water and 2 teaspoons baking flour

1 teaspoon baking powder, 1 tablespoon water, and 1 tablespoon vinegar (add vinegar separately at the end for rising)

Dissolve 1 teaspoon yeast in 1/4 cup warm water

1 heaping tablespoon of soy flour and one tablespoon water

1 tablespoon bean flour and 1 tablespoon oil

1 tablespoon of arrowroot powder mixed with 3 tablespoons water

1 tablespoon cornstarch mixed with 3 tablespoons water

2 tablespoons gluten flour or unbleached white flour, 1 1/2 teaspoons corn oil, 1/2 teaspoons baking powder, and 2 tablespoons water

For Whipping

1/4 teaspoon xanthan gum with about 1/4 cup of water.

Let stand. It thickens, and can be whipped like an egg white.

    I usually use condensed milk and baking soda.

  4. My current trial which seems to be working since past couple of times.
    When preparing cake from ready cake mix instead of using Egg replacer, I tried following.
    In one cup milk add 1tsp vinegar and keep it aside as you are start preparation. Use it instead of water plus pinch of baking soda.

  5. Dimple, vinegar is an interesting egg replacing agent.

    The lady from whom we got Niyom’s birthday cake, she said that she uses vinegar too as a leavening agent and does not use egg replacer.

  6. Vinegar plus Baking Soda/Powder gives the needed fizz for cakes….i use vinegar for making vegan cakes

  7. Yup for Vegan cake instead of cow’s milk you can use soy milk + vinegar.

    Dimple or any one else has tried the same substitute for making Brownie out of the Brownie Mix?

  11. I haven’t tried this with browine. Actually this combination comes from one of the vegan cupcake recipes. So I guess should work for brownie also.

  13. Whenever I visit back this article for reference, I wonder what is the difference between Binder & Leavening. When do u use which one?
