Ingredients:
Green, red, orange bell peppers, Zuchini sliced, onion, sliced, few spinach leaves, eggplant sliced (optional).
Saute all the vegetables in olive oil in the pan. Toast the bread with a slice of pepper jack or mozzarella cheese. After the bread is done apply “eggplant and red pepper spread” (Available at Trader Joe’s, it can be used in pasta also. It comes in small glass bottle).
Arrange the sauteed veges. Put cut avocado, cut tomato on top of veges, sprinkle some salt and pepper. Top off with another bread and enjoy.

Yes it’s a good variation to the regular sandwich with zucchini. Have made it as well using Amisha’s recipe.
Good source of different vegg.
When we prepared this yuumy sandwich Komal got “eggplant and red pepper spread” from Trader Joe’s. She mentioned that they have few other interesting spread too.
Can we avoid Spinach 🙂
